Something is needed for a pot luck or a carry-in dinner, popular around the holidays. While it does make it easier on the host to have every one contribute, sometimes it can be hard on the guest. No one wants to bring the desert table dud, that one thing no one will touch. My solution is to bring a non-baked desert. it is interesting, not usually duplicated and stands out among pies and cookies. These are some of the recipes I have taken to dinners in the past.

Rainbow Jell-o

You Need:

  • Eight packages of Jell-o, each four ounces. Get it in four colors (two green, two yellow etc.) or for Christmas get four packs of red and four packs of green.
  • Evaporated milk (15 ounce can)
  • Large clear casserole dish
  • Time, this takes about 8 hours, largely unattended

What To Do:

Dissolve first color in 3/4 cup boiling water. After it has slightly cooled add 1/2 cup evaporated milk. Stir until blended and pour in dish. Chill until completely set. Mix other package of same color in 3/4 cup hot water. Add 1/2 cup cold water. Chill until completely set. This will be your pattern: milky layer, clear layer, milky layer, clear layer and so on. repeat until all Jell-o has been used. This is time consuming, but gets compliments everywhere I have taken it. Looks very pretty on the dessert table too. (substitute sugar-free Jell-o with no change in flavor)

Strawberry Yum

You Will Need:

  • 3 oz package strawberry jell-o
  • 10 oz package sliced frozen strawberries
  • 1/2 pint whipped cream (such as Cool Whip)
  • 1/2 of angel food cake (get one from the grocery store) torn in small pieces

What To Do:

Dissolve Jell-o in 1/4 cup water, stir in partially thawed strawberries. Cool until it begins to thicken. Place 1/2 cake in bottom of dish. cover with 1/2 of the strawberry mixture. Cover with 1/3 of the whipped topping. Repeat until all used up. Refrigerate for at least 2 hours before service, to give the cake time to absorb the gelatin. Red and white stripes look lovely at Christmas. I have made this using different flavors of jell-o and different berries, my favorite black Cherry Jell-o and frozen mixed berries.

No-bake Cookies

You Will Need:

  • Waxed Paper
  • 1/4 cup cocoa (not hot chocolate mix, actual powdered cocoa)
  • 2 cups sugar
  • 1/2 cup milk
  • 1 stick butter
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter (crunchy or smooth)
  • 3 cups uncooked oatmeal

What To Do:

Cover a counter top in waxed paper. Combine sugar, milk, butter, cocoa in sauce pan over low heat until well blended. Remove from heat. Add vanilla, peanut better and oatmeal. Stir until all the oatmael is covered and the peanut butter is blended. Drop by the teaspoon on waxed paper. They will be solid when they are no longer shiny. If your kitchen is warm, put the waxed paper ona cookie shhet and place it in the fridge. I have put these out in the snow before to get solid.
